Simple, Scrummy, Cottage Pie

Do you need a quick, easy meal for a weeknight dinner? What about a dinner that can be made ahead of time and frozen for a time when you really have no time to cook? Are there leftovers in the refrigerator you want to use? For any of these occasions, Heinz cottage pieis the perfect meal.

To begin, use a large frying pan, brown 400g of minced beef in a tablespoon of olive oil. When it’s thoroughly cooked, add 400 ml of water, 1/4 tsp of thyme, and crumble one beef stock cube over it all. Allow it to simmer for 10 minutes. You can at this point add a peeled and chopped onion and 200 g of diced carrots; allow it all to cook for 15 minutes or until the veggies are tender. Alternately, if you have leftover cooked carrots from another meal in the fridge, add them near the end of the 15-minute cooking time. Next, stir in 100ml of Heinz Tomato Ketchup and 2 tbsp of Worcestershire sauce. Allow it to simmer for ten minutes.

While that is cooking, boil 700-800 grams of peeled, chopped potatoes in water until they are soft. Drain and return them to the pot. Mash the potatoes along with 100 ml of milk, 60 grams of grated hard cheese, and a teaspoon of Dijon mustard. Alternately, you can use your own mashed potato recipe or leftover potatoes from the fridge.

Mix one teaspoon of cornflour with a small amount of water until smooth. Then add that mixture to the mince-vegetable mixture. This will thicken up the sauce to make a delicious gravy. Allow it to bubble until it becomes the consistency you desire. Add some salt or pepper if you think the mince needs it.

Next, pour the mince mixture into an ovenproof dish. Top the mince with spoonfuls of mashed potato. Using a fork, evenly distribute the potato until the potato conceals the entire surface of the mince. Sprinkle the potato topping with 30 grams of extra cheese. Set your oven to 200 degrees Celsius and bake for about 15-20 minutes until the cheese and potato topping is golden brown.

This is a fabulous, family friendly meal that can be whipped up quickly, especially if you use leftovers. If your children are not fond of carrots, you can substitute green beans or omit the vegetables altogether. Serve with a side of green peas to have a healthy, delicious meal, ready in no time.
